I wonder if you could mix solidified coconut oil with dry ingredients first as Stella Parks did on her Banana Bread recipe. https://www.seriouseats.com/classic-banana-bread-recipe This is my go to recipe and has been working very well for me.
I think including the solid coconut oil with the dry ingredients is a lovely idea, but that would mean less liquid in the batter. During baking the oil would melt, so it’s probably okay. Why not try it and let me know? My coconut oil is always liquid!
